What's for Dinner? Chili for Busy Days

Do you have a favorite chili recipe?  This is our family's favorite, if for no other reason than it's simple, and it's easy to keep most of the ingredients on-hand.  We usually cook it without the chili powder first, seperate out enough for our children to eat, and then add in the chili powder for my wife and I to enjoy. 
 
 
We have added in other vegetables at times for variety. Don't be afraid to get creative with this recipe!
 
 The original recipe calls for using a crockpot.  There is nothing better than being out-and-about on a busy day, knowing you already have a hot, delicious, and healthy meal waiting for you at home.  More recently, if we will be at home, we double the recipe and cook it in a large pot on the stove.  We still have a hard time keeping it around long enough to freeze! I'm not sure if that's because of our family size, or because this chili also makes great lunches and leftovers!  I do think it would freeze well.
 
Here's the recipe! Enjoy!
 
Simple Chili
2 lbs. ground beef, cooked and drained
2 cans kidney beans, rinsed and drained
2 cans diced tomatoes, undrained
2 onions, diced
1 can tomato sauce
1 green pepper, diced
2 cloves garlic, minced
2 T chili powder
2 t salt
1 t pepper
 
Place all ingredients into a slow cooker and set on low (we usually use high) and cook for 6-8 hours.  Stir occassionally.
